My Freaky Fudge
By my previous quinoa post you probably thought I was a super healthy person (or not..) but today, as promised, I baked. My mom told me that the recipe had to be a no-oven-bake one so as not to get the house all heated up. I decided to made fudge and this is what it looked like in the end!
I'm going to take you through the process of making this bad boy, because this was not difficult!

I (kind of) Failed
I made quinoa with sunny side up eggs. In theory this should have been a super healthy breakfast that tasted good. It was a super healthy breakfast.. But it did not taste (or even look) amazing.

Health Kick
Being healthy doesn't have to be difficult. The most common misconception with being healthy is that you are going on a diet.
I don't believe in diets, I think it's important to go with how you feel about yourself.

Easter Eggs & War
Every year my family has a tradition of hard-boiling eggs and then coloring them in celebration of Easter.
*fun fact- I actually don't really like eating hard-boiled eggs*

17 Slices
One of my best friends, Kyleen, just recently turned 17. To celebrate, a bunch of us hopped into cars and went to a pizza place located in Philly.

Walking Around Town
So I went skiing for two runs until my butt hurt so badly I couldn't do it anymore so I went back into the condo, took a shower, and my Mom and I had a Mother-Daughter day out.
I found this picture in one of the shops we went into and I laughed. I completely sympathized with the bunny on both sides!

Taco Tuesday on Friday
Hello guys! Today was another really fun day skiing! It was freezing cold though so unfortunately I ended up going inside after an hour and a half, I was so cold that my fingers and toes hurt and they were very red!
Onto the Tacos!
This is the restaurant we went to in Breckenridge here.

Kellogg's Rice Krispy Treats
A while ago I decided it would be fun to make rice krispy treats. My mom and younger brother we arriving home from 3 weeks in Europe and I wanted to welcome them with something edible and simple since I still had my concussion.
I found the instructions to be very confusing on the Kellogg's website so I will phrase them in a much less confusing way here and also link the orginal at the end if you wish to see it. I did alter the recipe to what I found worked best for me.
Ingredients:
1 package of marshmallows (I used the normal size JET-PUFFED ones)
3 tablespoons of butter
6 cups of Kellogg's Rice Krispies Cereal (you could also substitute it with the chocolate krispies version, fruity pebbles, or any kind of cereal really)
Directions:
1. Wash your hands!
2. In a pot, melt the butter on low heat. Add in the marshmallows and stir them in. (It looks very difficult but be slow with it and it will turn out fine!)
3. Stir in your cereal.
4. Use a pan covered in wax paper and, using a spatula, pour the mixture (more like a glob) onto the sheet. I would highly recommend getting your hands wet because for some reason it works better than spreading it out with dry hands. You may need to wash them and wet them a couple of times until the process is done. Put it in the fridge overnight.
5. Cut and serve!
This was for sure one of the more easy recipes I have made and it turned out really well! I would also take note on the size of the pan you use. The larger it is the thinner the rice krispies are, and the smaller it is the thicker the rice krispies are. Mine were a bit thinner than I wanted them to be but they were still tasty none-the-less.
Here is the original Kellogg's Recipe!

Healthy Breakfast
So I've been "trying" to eat healthier by eating more fruits and veggies this summer. I have to say its been going great. I'm also trying to find other forms of exercise since I can no longer run at this point. Swimming and bike riding have become my best friends over the past few weeks.
So a couple days ago I made a super cool, yummy, and healthy breakfast. This is what was inside.
I added a handful of blueberries and raspberries.
Put it in a bowl and layered yogurt on top of it. I made two layers and it was way to much food! This stuff is filling. I barely made it through the first! You'll see what I did with the rest of it in another blog post really soon :)
The finish product! It sure was yummy and a super healthy way to start of my day!

Nutella Topping
I'm not quite sure if I invented something or not... Either way I love it and I'm going to be eating it for a long time! Meet man's best creation:
*drum roll please*
the Nutella topping!
I honestly love Nutella, It tastes oh so good with everything and anything. I now have another reason that I love it- read below you chocolate lover!!
It's creamy, melted, chocolatey goodness, and i'm going to tell you how to make it.
You Will Need:
Ice Cream of Choice (I used Turkey Hill's Cookies and Cream) OR
Anything that you would want to put molten Nutella on
Nutella
Microwave Safe Bowl
Step 1: To start you're going to want to spoon out 2 spoonfuls of Nutella into the microwave safe bowl. (Depending on how much ice cream you have this can vary- I had a big bowl so you may want a little less.)
Step 2: Put in the microwave for 35 seconds. Make sure your Nutella doesn't get soupy.
Step 3: While you are waiting for your Nutella to be done in the microwave spoon out as much ice cream as you want into a bowl OR get your dessert ready.
Step 4: Slowly pour the Nutella over your ice cream/dessert. As you pour it over it should thicken a bit as the ice cream is quite cold.
Step 5: Watch TV, relax, and enjoy!
Please don't get mad a me! I know that ice cream is out of season but you know, I still had some in my fridge and I couldn't let it sit there...

Quaker Instant Oatmeal
As a blogger it's my job to let people know what I do and do not like. Judging from the title you can probably guess what I'm talking about today... Yup, OATMEAL!
I LOVE OATMEAL!!!!!!!
I swear, sometimes I think I resemble my grandparents. I have a bowl of oatmeal a day.. Yea...
In my defense oatmeal is really good for you and it's also extremely tasty, so don't you dare mess with my oatmeal!
I love the Quaker Instant Oatmeal because it's easy to make and you can just stick it in the microwave and be done with it. You could also make it over a stovetop if you would rather do that. Quaker Instant Oatmeal also has really good flavors and I love all of them! (Once you get started you get addicted- beware, the oatmeal craze is approaching.)
I'm going to show you how to make Oatmeal in the microwave:
1. Grab a package of Oatmeal and pour the contents in a bowl big enough so that it can boil inside the microwave.
2. Pour 2/3 cup of water in the bowl and stir the mixture.
3. Put it in the microwave for 2 minutes.
4. Let it cool for about 2-3 minutes so that the water all evaporates and then eat the healthiest and tastiest thing ever!
Oatmeal is such a great snack when you get home and it fills you up enough until dinner comes around. I love how it's great for you too!
Yea, I didn't have a hard time finishing my food- I eat this stuff like candy. Seriously- what's wrong with me, who's ever heard of a high schooler who loves oatmeal?!

Carrot Cake with Cream Cheese Frosting
There are no words to describe this cake..
It is the best thing that will have ever happened to you and that's still an understatement!
This is my absolute favorite cake of all time! I was even contemplating whether or not I should share the recipe. But I would hate to deprive someone of the goodness though so here goes:
You Will Need:
It is the best thing that will have ever happened to you and that's still an understatement!
This is my absolute favorite cake of all time! I was even contemplating whether or not I should share the recipe. But I would hate to deprive someone of the goodness though so here goes:
You Will Need:
- 1 1/2 cups of sugar
- 1 cup of vegetable oil
- 3 eggs
- 2 cups of all-purpose flour
- 1 1/2 teaspoons of ground cinnamon
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla
- 1/2 teaspoon of salt
- 1/4 teaspoon of ground nutmeg
- 3 cups of shredded carrots (judge by how it looks, you don't want it to be too carroty either- use at least 2 cups.)
*This version of the recipe does not contain nuts as I don't really like nuts in my cakes- sorry!*
Also Note: I made a double batch so don't be surprised when it looks like I used to much of something.
1. Pre-heat your oven to 350 degrees F and grease a 13x9x2 pan. (If doing a double batch- find a bigger one!)
2. Shred your carrots- make sure you clean the skin of the carrots before shredding them.
3. In a large bowl mix together the sugar, oil, and eggs. Mix it until it looks like this:
I accidentally got some carrots it, if you were wondering what that orange thing was.
4. Stir in the remaining ingredients except for the carrots.
5. Stir in the carrots until it looks well blended.
6. Put it in the oven for about 35-45 mins. Make sure you check up on it frequently by sticking a toothpick down the middle. If the toothpick comes out dry it's ready. If it doesn't, it's not.
7. Once the cake comes out of the oven let it cool for about half an hour. Then start to make the cream cheese frosting.
*The cream cheese frosting is optional- however, carrot cake needs and deserves something on top of it so if you choose not to go with cream cheese frosting put some powdered sugar on top of it.*
Cream Cheese Frosting
*I find that for a single batch this is too much cream cheese frosting and not in a good way, so cut the recipe in half if you are planning on making a single batch or leave it the same if you are making a double.*
You Will Need:
- 1 package or 8oz. of cream cheese
- 1 tablespoon milk
- 1 teaspoon of vanilla
- 4 cups of powdered sugar
1. Mix everything together in a medium sized bowl using one of those small electronic mixers I have shown below.
2. Pour over your cake and then stick the cake in the fridge until you are ready to serve it!
Hope you guys love this recipe as much as I do! Just look at how pretty and appetizing it looks!
*Both of these recipe's are Betty Crocker's and the book I got the recipe from was the 40th Anniversary Edition.*
